Nouveau Reduction Sauce

1 Qt Beef Stock
2 Cups Nouveau
1 Tsp Sugar
½ Tsp Cinnamon
4 oz Butter
4 oz Flour
Salt & Pepper to taste

Step 1
   Slowly heat the Nouveau, sugar and cinnamon till reduced in half
Step 2
   Add above mixture to rich beef stock and reduce by 1/4
Step 3
   Melt butter and add flour to form roux
Step 4
   Slowly whip roux into Nouveau beef mixture
Step 5
   Add salt and pepper to taste

Great with any pork or beef dish. Enjoy!
