Bonnie's Red Hot Chili

2 bottles of hearty red Illinois wine (at minimum), we used GC Vintage Red

4 pounds ground beef

4 pounds sausage (your choice)

1 bunch celery diced

6 large onions diced

1 head garlic minced

4 jalapeno peppers minced

4 cans kidney beans

4 cans pinto beans

1 large can tomato paste

4 cans chopped tomatoes

1 small can Chipotle peppers

4 tablespoons chili powder

1 tablespoon cumin

1 tablespoon fresh ground pepper

1 table spoon salt

1 teaspoon oregano

Pour out a glass of Illinois wine. While enjoying your first glass of wine sauté the garlic, onions and celery in a small amount of olive oil until tender then add to chili pot.  Next, while enjoying your second glass of wine, fry the ground beef and sausage in olive oil until brown.  It’s time for another glass of wine while you empty the canned items into the chili pot. When beef and sausage is done add it to the chili pot and stir to combine all the ingredients.  Refill your wine glass as needed and add the spices to the pot and stir.  Next cook the chili on medium heat, stirring often, for about 30 minutes. Reduce heat to low and let the chili simmer for an hour or so.  Check the spices and add more as need to taste.  Finally add the remaining wine and simmer for another 5 minutes then serve hot in bowls with plenty of additional Illinois wine.
